Pimento Cheese

It's one of the most perfect foods.  What could be better than cheese and mayonaise?  This was always home-made when I was growing up, and I never really thought to make my own.  I'd buy some every once in the while at the deli, or from the meat department that came pre-made but it was never as good as we had at home.

We visited an "Amish" store this weekend, and they had home made Pimento Cheese... so I bought a small tub, 1/4 pound, I believe it was, for nearly 5 bucks.  It was good, really good, but at that rate, I figured I could make my own.

I had a jar of roasted red peppers, but no pimentos, so when I googled to see if I could substitute, I found that  the south lays claim to this food.  I guess they think that no one above the mason dixon knew how to cook anything until the "War of Yankee Aggression" Merged the North and the South into one big happy nation?  (All of this said totally tongue in cheek folks) kinda....

This "totally southern" dish has been in my Southern Ohio family for I know more than 100 years. My great Grandma, who, if she were alive today would be 113 years old, often told me of eating this treat that her Grandmother made for her when she was a small child. 

So since Ohio is "by no stretch of the imagination" "southern" I guess the South doesn't have total claim to this recipe.  :)  I've adjusted it to suit my taste, and probably to try to reclaim a little of the taste from my childhood. I don't measure much, I 'eyeball' it most of the time, so if it looks too dry for your taste, add a little more mayo, salad dressing or sour cream.Too runny?  Just grate some more cheese.  Colby and Cheddar mixed together is fabulous!


8oz block of Mild or Sharp Cheddar Cheese grated
1/3 cup Mayonaise (Hellman's is my choice)
1/4 cup Miracle Whip (Spin Blend if you can find it)
1/4 cup Sour Cream
roasted red peppers finely chopped, or 4 oz jar of pimentos  Amount to use here is at your discretion.  I don't like a lot of pepper in mine, so I used a strip of roasted red pepper that was about an inch wide and about 3 inches long.  For what it's worth, there's not much taste difference in Pimentos and Roasted Red Peppers.

Salt and pepper to taste
1 tsp. sugar

Graduation Party

So, today was son's graduation party, finally. Whew...I'm glad it's over, we've been killing ourselves to get ready for it.

We ended up having about a hundred or so I guess. I did not have time to count folks, and neither did anyone else. LOL We went for something different this year, we did not do a hog roast, instead, a friend of hubby's owns this fantastic place called Sky Haven Farm, and we bought meat from him. Absolutely fantastic, and Ed delivered it yesterday, what more could you want? We did Two Boston Butt's, and Ed sliced 2 hams for us. It was plenty for the folks we had.

The rest of the menu that I made consisted of Loaded Baked Potato Salad, Baked Beans, Home Made Macaroni and Cheese, Pasta Salad...ALL of those items were made in a 20X12X3 Steam table pan, so of course I hear, "Did you have it catered?"HA HA HA... anyone who knows me knows I don't have anything catered.

Cole Slaw, Jarlsberg Cheese Spread, Fruit and Dip, Vegies and Dip, and a Cheese/Pickle/Olive tray finished out the food I served other than his graduation cakes.

I wish I had taken pictures, but didn't have time for that either. My daughter made the Cheese Spread, and My neice and Sis cut up all the fruit and vegies, bless their ever lovin hearts, they got here at noon for a 5ish party. ;)

So, the food was ready by 5:30, and by then folks had started rolling in. All in all, I think a good time was had by all... the last folks left at 4:30 AM, yes, AM, and we still had over half a keg left. So, that tells me, that they were here for the company, and not the beer!

Son's Heart Broken

So... what do you do when your 18 year old son, who has had the same girlfriend for three years gets dumped? That was my question tonight. I wanted to scream, I wanted to cry, but what I really wanted to do was rip her hair out.

She gave no reason other than she didn't think now was a good time for them to be together... hello? After three years? My guess is that she's got another bronc ready to saddle up, because I know that women just don't dump perfectly good men unless they've already got another one lined up.

Son handled it as expected, he cried, he screamed, he trashed his room. He tried to take off in his car, but mom stood in front of him and wouldn't let him leave. Angry, heartbroken, mad at the world, upset teenager operating a 2000 pound vehicle is not a good combination.

My hope is that when she wants him back, and she will, of that I'm 110% certain, son tells her to take a hike. Wonder if he can get back the diamonds he's given her? I don't expect to get back the $200.00 camera, or the hundred dollar Coach purse... but hey, he should get his stuff back, she shouldn't be wearing diamonds my son bought for her while she's smooching some other kid.

Forty-WHAT??

So, I was washing dishes, and got to thinking, I've been doing this for how long? I cringe when think about how old I am now... I hate to even say the forty part, it sounds foreign to my own ears... when in the world did I get to be "forty-something"?

I guess my own children should be a good indicator of my own age... my oldest is 20, my middle is 18 and my youngest is 12. I mean, I can't be 30-something and have a daughter twenty now can I? Well, I guess I could, but that would mean that I wasn't the oh-so-good girl that I was. :) HA HA HA.

Seriously though, does everyone have these issues with being in their 40's? Does everyone wonder where the time has gone to? I don't know. So, anyway, I decided that I wanted to start writing down some of this stuff that happens in my life so I can remember it when I'm old! Hopefully I'll remember to do it!
